 GROCERY LIST

  • 2 large red bell peppers
  • 1 diced yellow onion
  • 1 cup cooked rice
  • Ground beef (93% lean, 7% fat)
  • ½ cup shredded cheese of choice
  • 1 tbsp tomato paste or tomato juice
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/2 tsp chili flakes
  • 1/2 tsp turmeric
  • Salt + pepper to taste
  • Olive oil

INSTRUCTIONS

Prep the Peppers - Slice the tops off the red bell peppers. Remove the seeds and clean the inside.

Make the Filling - In a pan, sautee together caramelized diced onion until soft and golden

Add ground beef - add seasonings and smash until well combined and turning brown in color. If too dry, add a bit of water. If too watery, turn up heat and keep mixing until drys out.

Add your cooked rice (optional but recommended)

Stuff the Peppers & Top with Shredded Mozz Cheese

Spray & Air Fry - Lightly spray the outside of the peppers with olive oil bottle. Place in the air fryer.

Air fry at 370°F for 10–12 minutes  - If you do not have an air fryer (which you should) you can oven bake at 375°F for about 30-35 minutes.
