Ingredients
Sweet Potato Base
1 large sweet potato, cubed
1 tsp olive oil
Salt, pepper, paprika
Cheesy Beef
1 lb lean ground beef
½ cup shredded cheese (cheddar or Mexican blend)
Seasonings; Garlic, onion powder, chili flakes, tomato paste honey, paprika
Pico de Gallo
1 Steak Tomato
1/4 Red onion
1 Lime
Cilantro Bunch
High-Protein Cilantro Sauce
½ cup Greek yogurt
Handful cilantro
1 tbsp lime juice
1 tbsp olive oil
Garlic + salt
Finish
Hot honey drizzle (honey + chili flakes)
DIRECTIONS
- Wash and cube your sweet potatoes
- Air fry sweet potatoes at 400°F for 15–18 minutes until crispy
- Saute ½ sweet onion and 1 clove of garlic on a medium heated skillet
- Brown ground beef in the same skillet, season, then stir in cheese
- Chop pico
- Build bowl: sweet potatoes → beef → pico → sauce → hot honey
