Chicken Tortilla Tacos (High Protein, 30 min)

The high-protein chicken tortilla base + toppings:
- Chicken "Tortilla" (baked or air-fried)
- Mango Salsa (fresh + spicy-sweet)
- Guacamole (creamy + punchy)
- Sauce (the secret finishing touch)
"Tortilla" Ingredients (Blend
- 2 medium chicken breasts (the best is organic)
- 1 egg
- 1/2 cup Parmesan
- 1.5 tsp garlic powder
- 1 tsp onion powder
- 1 tsp oregano
- 1/2 tsp paprika
- 1 tbsp Greek yogurt
- 1 tbsp olive oil
Directions (Oven Method)
- Preheat oven to 400°.
- Blend your chicken tortilla mixture well until chicken pieces have dissolved.
- Roll chicken mixture FLAT tortilla-sized on parchment paper on a tray. Flat tray preffered. If too sticky, add a little olive oil + rub a little on your hands too!
- Bake for 18 minutes until golden brown (Middle rack)
- Rest for 5 minutes before flipping.
- Top with sliced or shredded mozzarella cheese and pop back into oven for 5 more minutes.
- Let sit for 5 minutes before adding your toppings.
Air Fryer Method (Alternative)
- 400°F for 15 minutes
- Place under a tray/weight so it doesn’t fly
Mango Salsa
Ingredients
- 1 chopped mango
- 1/4 red onion, chopped
- 1/4 bunch cilantro leaves (enough to make it visible but NOT too green)
- 1 tsp chopped jalapeño or chili flakes✨
- Juice of 1 entire lime
- Salt (add slowly + taste test before adding more)
Guacamole
Ingredients

1 ripe avocado, smashed - 1/5 red onion, chopped
- Some chopped cilantro (without stems to avoid bitterness)
- 1/2 chopped Roma/cherry/beefsteak tomato
- 1/2 lime juice
- Salt to taste
- Sriracha (key) or jalapeno
Sauce (The Secret Finish)
Ingredients
- My secret mayo OR regular mayo
- Ketchup
- Sriracha (for heat)
- Chopped yellow onions
My Pro Tips (So They Come Out PERFECT)
- Blend until totally smooth (no chicken chunks) = tortilla texture is elite.
- Sticky batter? Add a little olive oil and rub a little on your hands before shaping.
- Rest time matters: those 5-minute rests help it set so it flips cleanly and holds toppings.
- Air fryer hack: weigh it down with a tray/weight so it stays flat.
