Viral Chicken Tortilla Tacos (High Protein)

High-Protein  • Quick & Easy 

Each serving packs 40g protein and the “tortilla” is literally made from chicken—so you get that crispy taco vibe with a high-protein base that actually keeps you full.

Secret Sauce (the finishing touches)

 

"Tortilla" Ingredients

  • 2 medium chicken breasts (the best is organic)
  • 1 egg
  • 1/2 cup Parmesan 
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp oregano
  • 1 tsp paprika
  • 1 tsp good salt
  • 1 tbsp Greek yogurt 
  • 1 tbsp olive oil 

Directions (Oven Method)

  1. Preheat oven to 400°.
  2. Blend your chicken tortilla mixture well until chicken pieces have dissolved.
  3. Roll chicken mixture FLAT tortilla-sized on parchment paper on a tray. Flat tray preferred.
  4. Bake for 18 minutes until golden brown (Middle rack)
  5. Rest for 5 minutes before flipping.
  6. Top with shredded mozzarella cheese and pop back into oven for 5 more minutes.
  7. Let sit for 5 minutes before adding your toppings.

OR 

  • Air fry 400°F for 15 minutes
  • Place under a tray/weight so it doesn’t fly

Mango/Kiwi Salsa

  1. 1 chopped mango or kiwi
  2. 1/4 red onion, chopped
  3. 1/4 bunch cilantro leaves (enough to make it visible but NOT too green)
  4. 1 tsp chopped jalapeño or chili flakes✨
  5. 1 lime juice
  6. Salt (add slowly + taste test before adding more)
  7. Honey drizzle for balance

Guacamole

Quick & Easy Guacamole Recipe1 ripe avocado, smashed + 1/5 red onion, chopped

Some chopped cilantro (without stems to avoid bitterness)

1/2 chopped tomato + 1/2 lime juice

Salt to taste + Sriracha (key)

IMPORTANT TIPS

  1. Blend until totally smooth (no chicken chunks) = tortilla texture is elite.
  2. Sticky batter? Add a little olive oil and rub a little on your hands before shaping.
  3. Rest time matters: those 5-minute rests help it set so it flips cleanly and holds toppings.
  4. Air fryer hack: weigh it down with a tray/weight so it stays flat.
