Ingredients

  • 1 cup berries โ€” strawberries, blueberries, raspberries, or a mix (can be frozen)
  • 2 tbsp chia seeds
  • 1โ€“2 tsp honey, to taste
  • 1 tsp fresh lemon juice
  • Small pinch of salt

Method

  1. Add berries to a small saucepan over medium-low heat.
  2. Cook for 5โ€“7 minutes, stirring and lightly mashing until juicy and jammy.
  3. Remove from heat.
  4. Stir in lemon juice, honey, and a tiny pinch of salt.
  5. Mix in the chia seeds.
  6. Let sit for 5โ€“10 minutes to thicken and hydrate the chia seeds
  7. Transfer to a jar and refrigerate.

Texture: Want it smooth? Mash or blend the berries before adding the chia seeds. Want texture? Leave some berries chunky.

Frozen berries work too โ€” great for winter when fresh berries are pricier, and they break down just as well in the pan.

Taste as you go: Sweeter berries need less honey, tarter ones need a touch more โ€” adjust before the chia seeds go in.

For gifting: Double the batch and portion into small 4oz jars โ€” one batch makes several gift-sized jars.

Ingredients

  • 1 cup pitted Medjool dates (about 8โ€“10)
  • 1/2 cup milk of choice, depending on desired thickness
  • 1 tsp vanilla extract
  • Pinch of salt

Method

  1. If your dates are firm, soak them in hot water for 10 minutes, then drain.
  2. Add dates, 1/2 cup milk gradually, vanilla in a low-medium heated buttered pot.
  3. Remove from heat and let it cool before blending smoothly
  4. Add more milk 1 tbsp at a time until you reach your desired caramel consistency.
  5. Taste and add another tiny pinch of salt if you want that sweet-salty caramel flavor.
  6. Refrigerate in a sealed jar.

I'd keep this one thick enough to spread rather than pour โ€” it's incredible on Greek yogurt, apples, oatmeal, toast, or pancakes, or drizzled over a little dessert.
