The name comes from Laudes — one of the oldest rituals in human history. For centuries, people have dedicated the first hour of the day to stillness, prayer, and connection with something greater than themselves. That first moment of the morning, before everything else begins, has always been sacred.

We didn't replace that ritual. We gave it a new form.

Laudeto is grown at 1,800 meters above sea level in Pinchote, Santander — one of the highest-altitude coffee zones in Colombia's eastern mountain range. The farm has been in the same family for three generations. The current farmer didn't just inherit the land. He inherited the obsession for getting it right.

His choice: anaerobic fermentation. Instead of exposing the harvested cherries to open air, they are sealed in oxygen-free tanks where the natural yeasts of the fruit work slowly and without interference. No shortcuts. The result is a depth of flavor and a brightness of aroma that conventional washed processing cannot produce — caramel that lingers, a grapefruit note that wakes up the palate, and a hazelnut finish that asks you to take one more sip.

The Castillo variety, usually known for its clean and balanced profile, becomes something more complex in Laudeto's hands. The combination of altitude, anaerobic fermentation, and three generations of intuition produces a cup that is both precise and personal.

Best brewed with: V60 — Ratio 1:16 · 18g coffee · 288ml water at 92°C · 2:30–3:00 min total extraction
